This paper examines what land grant colleges of agriculture were designed to be and do and, using their published mission statements, discusses what they now claim to be and do. Teaching ‘such branches of learning as are related to the agriculture and the mechanic arts’ and ‘to promote the liberal and practical education of the industrial classes’ is what land grant colleges were designed to do; it is the land grant mission. The paper asks whether these things are what land grant colleges of agriculture do now. The original mission has been amended with new challenges that must be met in a time of declining public support for higher education, societal distrust of science and a negative public perception of agricultural technology, in a culture that wants cheap food. The agricultural community, including colleges of agriculture, has been slow to accept the challenges and opportunities inherent in the questions agriculture now faces. Agriculture remains an essential human activity in our post-industrial, information-age society. Colleges of agriculture are in trouble, and this paper suggests that the sensible thing to do may be to turn away from self-interest in survival to take a leadership role with emphasis on the obligations of service and humanism.

A mail survey was used to gather information from the main food buyer in random households in southeast Missouri to analyze consumer preferences for locally grown food. A majority of shoppers in the region were not aware of the state's AgriMissouri promotion program. Consumers defined locally grown not as a statewide concept but as a narrower regional concept that could cross state boundaries. Most important when purchasing produce were quality and freshness, and most consumers perceived local produce at farmers' markets to be of higher quality and lower price. Farm households were not significantly different from other households in the region and did not show a preference or willingness to pay a price premium for local food products. Food buyers who were members of an environmental group had higher education and income and were more likely to purchase organic food and more willing to pay a higher price for local produce. Households in which someone was raised on a farm, or had parents who were raised on a farm, had a preference for locally grown food and were willing to pay a price premium for it. Marketing local products should stress quality, freshness, and price competitiveness, and appeal to environmentalists and those with a favorable attitude towards family farms.

Spring milling wheat (Triticum aestivum L em. Thell) and soybean (Glycine max L.) cultivars were managed to International Organic Certification Standards on two organically certified farms to evaluate two physical weed control methods, cultivar performance and quality. Nutrients were supplied as manure and compost. There was no difference (P<0.05) between flaming plus fingerweeding versus fingerweeding twice, 10 days apart, on weed control, yield, and protein in both crops. The spring wheat cultivar, AC Barrie, may be particularly well suited to production under an organic system, as indicated by its superior performance to AC Walton at the Springfield site in 2000, when growth conditions were favorable. A severe drought in 2001 limited the mineralization of soil and manure nitrogen, with the result that all spring wheat cultivars at the Springfield site did not make 13.5% grain protein, required to meet milling quality criteria. Also, in 2001 at both sites, soybean yields were reduced by 50% compared to 2000 because of reduced moisture availability and weed competition. Delays in field operations, lack of sufficient soil moisture and reduced mineralization of manure during the 2001 growing season were major factors in influencing crop production, especially at Springfield.

Recent studies have suggested that farmers' markets are increasingly important contributors to the economic development of rural and urban communities in the US. Yet, little is known about the specific ways and the extent to which farmers' markets contribute to developing their vendors' capacities as entrepreneurs or affect vendors' business success. In this study, we examine the capacities of farmers' market vendors in three states—New York, Iowa and California—and associated entrepreneurial outcomes. In particular, we explore how vendors' business activities and capacities are associated with different sizes of enterprises. A mail survey of up to 400 vendors, from 20 markets in each state, was conducted in 1999 to examine factors associated with business outcomes and vendor capacities. The importance of farmers' markets to small-, medium- and large-size enterprises and the particular contributions that have been most helpful to vendors were identified. Small-scale enterprises are still the most numerous at farmers' markets, making up almost 56% of all vendors. More than half of these enterprises are operated by part-time farmers or market gardeners. We found that the small enterprises had both less business and market experience, and sell at markets closer to home than do medium and large enterprises. Although these vendors with small enterprises have engaged in fewer entrepreneurial activities, made fewer business contacts and acquired fewer skills at farmers' markets, compared to medium and large enterprises they were more likely to consider farmers' markets to be their most important business development opportunity. Although, for these small enterprises, participating informers' markets may not yield financial gains as large as those gained by medium- and large-scale vendors, farmers' markets may be one of the few options for entrepreneurs to maintain and/or enhance their market niche in a community. Key information needs of small-, medium- and large-size enterprises are described, as well as suggestions for ways in which local educational institutions, Cooperative Extension, government agencies and nonprofit organizations can help support these enterprises and enhance community economic development in their regions.
