Food additive and pesticide safety

In a nutshell
The assessment of food additive and pesticide residue safety involves extrapolating data to calculate a dose-response curve of adverse health effects and estimating lifetime exposure.
These steps all involve risk estimates and assumptions, and usually rely heavily on animal data. Clinicians can provide the best advice to their human patients if they understand what lies behind the concept of “reasonable certainty” of safety.
