The starting point for looking at new products from milk must be to look towards the market place for the ideas and for technology to solve them. Too often in the past industries have gone the reverse route and developed the technologies and then tried to find a use for them. It is therefore necessary to understand the key elements for change in our society that affect lifestyles and purchasing decisions.
