4 Lampe, A Lexicon of Patristic Greek (Oxford, 1960ff.), s.v. notes that in Dial. 29, I ἔθνη is used “of Gentile Christians.” He cites no other instances of such a use. I suspect that the word was not generally used in this sense except in cases where the context made it clear who was meant. A good parallel is Rom. 15:27.
